In "Shackle and Hoist" kosher slaughter, cattle are tripped to the ground and forcibly restrained while their legs are chained. Panicked cows are turned upside down prior to slaughter while workers stand on their legs and use a sharp metal instrument called the "devil's fork" to pin their heads down and expose their necks for the kosher slaughter cut. After the cut, the cattle immediately are hoisted by one leg to be bled out%u2014during this procedure, most of the animals are still conscious and able to feel pain.

Following public outrage over a 2007 PETA investigation of a kosher slaughterhouse in Uruguay, Israel's chief Ashkenazi rabbi, Yona Metzger, promised to phase out the "shackle and hoist" slaughter method.

More than two years later, a new PETA investigation of Frigorifico Las Piedras—the largest cattle slaughterhouse in Uruguay—reveals that this barbaric kosher slaughter method continues to be used to produce meat that's exported to both the U.S. and Israel.

We the undersigned expect Chief Rabbi Yona Metzger to fulfill the promise that he made two years ago to end the use of this cruel method among all South American companies that supply kosher meat to Israel. I also expect Rabbi Menachem Genack to suspend immediately the Orthodox Union's certification of any plant in South America that practices this method and to pressure these suppliers to convert to the use of more humane restraining pens.
We the undersigned also urge Alle Processing to end its contract with Frigorifico Las Piedras if proper restraining pens are not installed and to seek other suppliers of kosher meat, domestically and internationally, that do not use "shackle and hoist" kosher slaughter.
